- Complete daily station mis-en place in a timely, efficient fashion
- Receiving and inspecting fish and shellfish to ensure quality and freshness
- Receive all seafood and properly follow Seafood storage practices
- Maintain a clean and organized station
- Be able to check all food at any required moment before and during service
- Follow all proper food safety practices and kitchen safety practices
- Continue to improve upon existing skillset
- Displays and stores food in the appropriate temperature conditions.
- Scaling, gutting, filleting, and cutting fish into portions according to front kitchen specifications
- Following safety procedures and regulations when handling sharp knives and operating machinery such as slicers and grinders
- Packaging, labeling, and storing fish & other seafood products according to food safety guidelines
- Fabricating, processing and portioning whole fishes
- Cuts and cleans fish, seafood and shellfish
- Ensure fish and seafood are fresh and qualify
- Weighs, packages and labels of fish
- Performs other duties as required or assigned
- Clean and sterilize the wall, table and floor.
- Performing basic cleaning and maintenance tasks on equipment.
- Keeping track of inventory levels and ordering supplies as needed.
- Keeping records of sales and inventory for reporting purposes.
- Operate, clean, and maintain all kitchen equipment.
- Stocks counter neatly, accurately and in a timely manner as per pricing menu, and promptly inform management when fish and seafood quantities or supplies are low.
- Responsible for the day-to-day implementation of Seafood certification programmes.
- Review and assess Seafood audit reports.
- Order seafood products and supplies to meet customerrequirements.
- Good communication skills to effectively interact with other kitchen staff members and communicate customer preferences or special requests.
Job Requirements:
Previous experience in F&B preferred (but not mandatory)
Good communication and teamwork skills
Able to work weekends, public holidays
Positive attitude, well-groomed, and customer-oriented
