Senior Kappo Chef (SGD $6,500–$8,500)
Shunsui Group is looking for an experienced and reliable Senior Kappo Chef to join our growing team.
Position Details:
Job Title: Senior Kappo Chef
Salary: SGD $6,500 – $8,500 (depending on experience and skill level)
Location: CBD
Work Schedule: 6 days/week
Your Role:
- Break down whole fish and prepare high-quality seafood dishes.
- Handle hot kitchen items such as grilled, fried, and simmered dishes (robata, tempura, oden, etc.)
- Ensure smooth kitchen operations across both cold and hot food lines
- Guide junior chefs and help with training if needed
- Maintain hygiene, stock control, and quality standards
- Manage purchasing of ingredients with our suppliers in Japan directly
- Manage costing and inventory management
What You Must Have:
- Solid experience in filleting whole fish, sashimi, nigiri, and maki sushi
- Competence in hot kitchen (Japanese izakaya dishes, grill/fry/simmer stations)
- Capability to create omakase course every month
- Ability to work independently and handle pressure during busy service
- Team leadership and communication skills
