Key Responsibilities:
- Prepare and grill various yakitori items including chicken parts, seafood, vegetables, and other specialty skewers.
- Manage the yakitori grill station, including setting up and breaking down equipment, maintaining grill temperature, and managing binchotan charcoal.
- Ensure consistency in flavour, presentation, and quality of all yakitori items served.
- Monitor stock levels of yakitori ingredients and coordinate with the kitchen team to ensure adequate supplies.
- Maintain proper food hygiene and kitchen cleanliness according to food safety regulations.
- Work closely with the kitchen team to ensure smooth service and timely preparation of orders.
- Innovate and contribute to seasonal or special yakitori menu items, while respecting traditional techniques. Train and guide junior staff on yakitori techniques when required.
Requirements:
- Proven experience as a Yakitori Chef or in a similar Japanese grilling role.
- Strong knowledge of different chicken cuts and preparation methods.
- Skilled in handling binchotan or traditional charcoal grills.
- Good understanding of Japanese cuisine, food safety, and hygiene standards.
- Ability to work in a fast-paced, team-oriented kitchen environment.
- Willingness to work flexible hours, including weekends and public holidays.
- Basic understanding of kitchen operations and inventory management.
- Formal culinary training or certification in Japanese cuisine is a plus.
- Japanese language skills are an advantage but not mandatory.
- Passion for Japanese food culture and craftsmanship.
